Abstract
This study was conducted to investigate the sprouting behavior of potato microtuber and changing pattern of various sugar compositions during low temperature (6¡É) storage. After 6 months of low temperature storage, the dormancy of ¢¥Superior¢¥ microtubers was broken and the potato seeds began to sprout. The gradual decrease of sucrose content in microtuber was observed throughout the whole period of low temperature storage. On the other hand, the contents of glucose and fructose increased at early stage of low temperature storage, and then maintained constant. Overall sugar contents were much higher in the sprout part than in the tuber part and especially the sucrose content of sprout part was very high compared with that of tuber part. These results appear to be quite similar to the pattern of storage and sprouting behavior of natural seed potatoes during low temperature storage.
